“The food operating system: how AI is being deployed across the food system to reduce waste”
ReFED, the leading U.S. nonprofit research authority on food waste, names KITRO as one of the AI-driven measurement systems deployed at scale in foodservice.
The report cites a peer-reviewed 2025 academic study (Sigala et al.) that evaluated a KITRO system across five hospitality sites in Germany, Greece, and Switzerland: at four of the five sites, food waste per meal dropped 23-51%, prep waste fell by more than 80%, and the cost of edible food waste per meal declined by up to 39%.
The one site that didn’t improve as much was affected by COVID-era demand disruption and low management engagement — a finding the report uses to underscore that KITRO’s technology works best when kitchen leadership actively uses the data, not as a critique of the tool itself.
KITRO Co-CEO Anastasia Hofmann is also interviewed directly, explaining that adoption depends on how a solution is introduced internally, and noting that hotels – where chefs tend to be personally invested in their craft – have become KITRO’s fastest-growing and highest-performing customer segment.
